Black Bean Brownies

Black bean brownies are a fun way of getting your kids to have some extra fibre and protein. And the fact that they taste great is an added bonus! I love this recipe because it’s easy to put together and satisfies my sweet tooth. These are the fudgiest brownies ever; I highly recommend trying them even if the idea of black bean brownies isn’t for you.

These brownies are great because the black beans add protein, which is excellent for helping keep you full and blood sugars stable!

My mom has never been a fan of brownies, but she loved these! I promise you cannot taste the beans. I did a taste test with my family and friends, and no one guessed that they were made with black beans. They all loved these brownies! So this could be great for little ones who don’t usually enjoy eating beans!

These brownies are one of my favourite brownie recipes I’ve made in a while because they are so moist and chewy.

Let’s get into the recipe; Here’s what you’ll need:

Ingredients:

  • 1 540 mL can of black beans (drained and rinsed)

  • 1 egg

  • 2 tablespoons coconut oil (melted)

  • ½ cup all-purpose flour

  • ⅓ cup cocoa

  • ¼ cup maple syrup

  • 1 teaspoon vanilla

  • Pinch of salt

  • ¼ teaspoon baking soda

  • ¼ teaspoon baking powder

  • Chocolate chips to taste

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Lightly grease a brownie baking dish and set aside (I used a small amount of coconut oil)

  3. In the food processor, add drained and rinsed black beans, egg, and coconut oil and process until almost smooth.

  4. Add the rest of the ingredients other than the chocolate chip and blend until well combined or as smooth as you can get the mixture.

  5. Remove mixture from food processor and add to a bowl. Fold in chocolate chips.

  6. Pour mixture into brownie tray and place in the oven for 20-25 minutes depending on the thickness of your brownie and your oven. (Poke the brownies with a toothpick and if it comes out clean and dry the brownies are done)
